Roasted Pork Leg

Hi! welcome to Pachi the Colombian Cook and to my Magic Realism Kitchen. Today, we’re gonna transform this beautiful leg of pork into delicious healthy feast for all of us!

What You’ll Need:

2 Onions, cut into quarters

1 Cup Dijon Mustard, 220 Grams Jar

½ Cup Cilantro

½ Cup Parsley

4 Thyme sprigs, leaves only

4 Garlic cloves or 2 tbsp Garlic paste

2 Rosemary sprigs, leaves only

3 tablespoons Cabernet salt

3 tablespoons grated fresh Ginger, plus one inch thinly sliced

2 pod fresh Peppercorns or 1 teaspoon pepper

1 cup Orange juice

Let’s start by preparing the pork leg

Make a crisscut at the skin of the pork about half an inch down. This is gonna help us season the pork it’s gonna be set in the refrigerator over night and that way it will flavor the meat from the top and from the bottom.

It should look like this

We’re gonna melt all of the fat.

You need a very sharp knife and go slowly. There’s no rush. You really want to separate the pork skin.

Now we prepare the rub

Take the pork leg and place it in the pan and the quarter onions should be on the sides

Grab a mixing bowl. Add in the fresh peppercorn, cabernet salt, ½ cup of dijion mustard, garlic cloves, minced cilantro, parsley, thyme, and rosemary. Mix them all together

Now, rub it on the pork specially on the cuts then on the bottom and the sides.

The rub is gonna go through the cuts. That will help season the pork

Now let it marinate for a day.

Ready to be baked!

After marinating for a day, it’s now ready for the oven.

Before the oven let’s add in the finishing touches. Rub the minced ginger over the cuts of the pork.
Leave a thin slice of ginger at the top and also at the bottom of the pan.

Get a new pan. Put the orange juice on it and then place the whole meat on top of it and also place the onions on the sides.

I am using an air cooker in the picture.

Set the oven to 300 degrees, leave it for about 2-3 hours. To know if it’s ready, get a thermometer the temp of the meat should be 160 degrees.  

Then that’s it!

You’ll have a very tender meat with crispy skin that has a very beautiful color!
