Nutritionist, pastry chef, teacher, and writer
Patricia McCausland-Gallo is a nutritionist, pastry chef, teacher, and writer. She has a B.S. in Foods and Nutrition, instruction prescribed by the FDA, attended the American Institute of Baking in Kansas as well as École Lenotre in Paris
The Chef’s professional work began 1979 @École Lenotre in Paris. Pachi, as she is called, has published six cookbooks sold worldwide in stores and on the web: Secrets of Colombian Cooking (Hippocrene Book, 2004), Expanded Edition May 2012. Pasión por el Café (Editorial Norma 2006, FRP 2008, Circulo de Leitores 2009 -who sold 55,000 books in one Xmas season) IPPY Silver Award 2008 and Gourmand Best Single Subject Food Book in Latin America, 2006.
Coautored Williams Sonoma’s Essentials of Latin Cooking 2009 – sold in over 300 stores in the US and Canada, The Food of Colombia and Venezuela, 2010, Anness Publishing sold worldwide by the UK Publisher. Cómetelo Flaca, 2011, her book on healthy food, was a reflection of her family lifE; self published for Mausi Cancer Home in Panama, if sold 5000 books for the Xmas season of 2011.
Chef Pachi has been a food writer for newspapers in Colombia and Panama. Her first interview in a newspaper was in Boton Rouge. Lousiana in 1981, thousands of interviews and presentations in between include ABC, CBS and CNN en Español in the United States.

She has been an executive pastry chef, manager, and owner, as well as recipe developer for special needs children. Pachi was invited to be part of Michelle Obama’s Chef’s Move! To Schools. She has been a speaker in many cities thoughout the United States and Colobmia.
Chef Pachi retired in 2010 at the age of 50 to enjoy Island life and fishing. She retook her work in 2013 when she was contadted by Dr. Clyde Wilson, Stanford University professor, to create an invaluable nutrition resource for Americans to raise their metabolic rate and loose weight for life.
