The holidays are officially upon us and, for many, that means celebrating with family and friends, and the possibility of overindulging. For those of us on a keto diet, the holidays can be especially difficult as we have to be more careful about what we choose to eat so as not to slip out of ketosis. However, through some creative thinking and a little discipline, the holidays can be a celebration of food, family and the true meaning of Christmas.

     If you are practicing a keto diet and are beginning to feel holiday eating anxiety, keep reading for some helpful tips that will make your holiday season more keto-friendly than ever. Let’s get started:

6 Ways To Make Your Holiday Season Keto Friendly

Eat Beforehand- to ensure that you are not tempted by all of the foods you can’t have, eat before you arrive to a holiday party. This can help suppress your appetite and curb your cravings. Make a pre-party snack such as my Keto Friendly Mozzarella And Rosemary Skewers.

Plan Ahead- whether you need to bring along some keto friendly snacks or you want to let the host know about your dietary needs, planning ahead can help keep your holidays keto-friendly. You can also bring along a keto friendly dish to pass at your next family function.

Recognise Keto Friendly Foods- this is especially helpful for those new to the keto diet. By knowing what you can and can’t eat, you will be better prepared for the variety of foods served at most holiday gatherings. Some foods that might not seem traditional diet-friendly, are actually keto-friendly such as my Pineapple Roasted Leg Of Pork With Cracklings.

Always Have A Glass Of Water- keeping your hands occupied around food is important for anyone on a diet, regardless if it is a keto diet or not. Plus, staying hydrated is a good way to avoid overeating.

Know Your Weaknesses And Set Limits- overindulging is common during the holidays and it is best to know your weaknesses so you can avoid those things. Also, set limits for yourself. That way, if you do happen to overindulge, you will be able to stop yourself.

Asparagus – Mango Vinaigrette

Hi! Welcome! I’m Pachi the Colombian Cook! and today, we are gonna make a delicious Mango with Fresh Asparagus.

Ingredients

  • 2 cups mangoes diced
  • 1 tsp rice vinegar
  • 1 dash peppercorn
  • 2 scallions green part too, optional
  • 3 garlic cloves
  • 1 tsp olive oil extra virgin
  • 28 spears asparagus
  • 1 tsp ginger sliced
  • 6 tsp water

Instructions

Let’s start by preparing our Mango dressing.

  • Start by dicing the mango you will need 2 cups, we will be using a blender for the dressing.
  • Add the 2 cups of diced mango to blender and then, add 2 spoons of rice vinegar. The ratio of mango and rice vinegar is 1:1 or 1 spoon of rice vinegar per cup of mango.
  • Next, we add minced garlic. We only need a small amount for this. A little less than a garlic clove about a third of a teaspoon. After this prepare a teaspoon of grated fresh ginger, a small handful of Cilantro, a quarter teaspoon of salt, half teaspoon of peppercorn. Blend all ingredients using a blender.
  • After blending, we now add olive oil. The olive oil, should be the same amount of the vinegar that we added. Since we added 2 spoons of vinegar, we will be adding 2 spoons of olive oil and then stir it all together.

Cooking the Asparagus

  • We will be using an oven to cook our asparagus.
  • Let’s prepare the asparagus using the oven pan. First off, slice the ginger into a thin strips. We only need a little about 5-7 strips. This will give the asparagus an aromatic smell!
  • Place the strips of ginger on the oven pan then add in some olive oil (enough to cover the whole pan or the asparagus), and crush a peppercorn using your hand then spread it to the pan.
  • Once everything is in there,prepare the asparagus by cutting the white part off and place it on top of everything, mix it up with the ingredients and make sure that all of the asparagus is covered with it.
  • Put the pan in the oven. Set it at 450 Celsius for 2-3 minutes.

Adding it all together.

  • When it’s done baking, put it on a plate and spread the mango dressing on the asparagus.
  • And there you have it! Asparagus with Mango Dressing!

Gracias a Felipe Motta, también estuvimos visitando el viñedo Beringer donde pudimos visitar sus cuartos donde añejan los mejores vinos, e inclusive una cava llena de botellas de antes de la segunda guerra mundial. Que experiencia!

En Panamá celebramos el cumpleaños de la Ministra Embajadora de Colombia, Patricia Montoya de Rivera con un gran buffet de picadas Colombianas que deleitaron a mas de 50 señoras que comieron y bailaron animadamente toda la noche. Felicitaciones a Patricia de nuevo.

Conociendo lugares gastronómicos de la zona Californiana, también encontramos que Dean and Deluca, el gran deli Neoyorkino abrió sus puertas en un maravilloso y enorme local de donde obtuvimos panes, carnes frías y deliciosos dulces.

GENOVA Deli, Napa

Napa tiene un delicatessen de muchos años que se llama Genova Delicatessen, y allí también estuvimos comprando toda clase de vinagres y salsas preparadas con los vinos de la región. Aceites de oliva, quesos y carnes frías como para chuparse los dedos…

Clases de cocina para recién casados….

Tuve un grupo de recién casados que cocinaron en pareja sus primeras cenas! Aprendieron a preparar pollos, mariscos y pescados al igual que vinagretas y un delicioso waffle belga con salsa de frutos del bosque.

PANES RAPIDOS

Estuve desarrollando unas recetas de panes rápidos, preparados en el procesador de alimentos para utilizarlos como centros de mesa en Primeras Comuniones al igual que en las festividades que vienen, Acción de Gracias y Navidades, Una delicia de panes que sirven para rellenarlos con fruta, quesos y hasta colocarles una vela en el centro.
