Chicken Kabobs with Hoi sin Glaze
- 2 whole Chicken breast Or ¾ Pound Breast Filets
- 1 Recipe Hoi Sin Cilantro Glaze (Page Xx)
- 3 tbsp Chicken Stock
- 12 Pearl Onions Frozen
- 1 Roasted Pepper Or 1- 6 Oz Jar Of Whole Pimentos
- 6 leaves Scallion (Green Part)
- 1 tbsp Sesame Seeds
Hoi Sin Cilantro Glaze
- 1/4 cup Hoi sin sauce
- 1 tbsp Cilantro Minced
- 1/2 tbsp Rice vinegar
- 1/2 tbsp Honey
- 1/2 tsp Garlic Minced
- 1/2 tsp Ginger Grated frozen or fresh
- 1/2 tsp Garam Marsala
- 1/2 tsp Chinese Five Spice
Chuzos de Pollo al Hoi Sin
- 3/4 libra Pechuga Deshuesada (2 Medias Pechugas)
- 1 Receta Glaseado Hoi Sin
- 3 cucharadas Caldo Pollo
- 12 Cebollitas Peladas Y Precocidas
- 1 Pimentón Asado Y Cortado En Cubos Grandes
- 6 hojas Verdes Cebolla Larga Picada
- 1 cucharada Semillas Ajonjolí
Glaceado Hoi Sin
- 1 cucharada Cilantro Picadito
- 1/2 cucharada Vinagre De Arroz
- 1/2 cucharada Mile De Abejas
- 1/2 cucharadita Ajo Machacado
- 1/2 cucharadita Jengibre Rallado
- 1/2 cucharadita Chinese Five Spice

Cut the breasts into 1 inch pieces.
Mix all the sauce ingredients, divide the sauce in 2. To half the sauce add the chicken stock. Keep the rest to season and glaze the kabobs.
Place the chicken into skewers with the pearl onions and roasted peppers. Insert the scallion into the bottom of the skewer to cover it and then wrap the leftover piece around the kabob. Tie at the end by turning around any of the foods, i.e. the onion or the chicken.
Brush all the pieces with glaze, sprinkle with the sesame seeds and set aside to rest for 10 minutes. Refrigerate if more time is needed.
Place over the grill over medium heat and cook for 3 to 5 minutes on each side. Broil in a convection ultra fast oven over a rack for 5 minutes or in a regular broiler for 3 to 4 minutes per side.
Serve with green salad and potato puree!

Corte las pechugas en cubos.
Prepare el glaseado y divida en 2. A una parte le agrega el caldo y la otra la deja tal como está para untar los pinchos.
Arregle el pollo, las cebollitas y el pimentón en los pinchos metálicos o de Madera.
Unte la salsa restante sobre cada pincho o chuzo y espolvoree con la cebollita y el ajonjolí. Deje reposar refrigerado durante 10 minutos o mas para que el pollo coja sabor.
Cocine sobre un asador o en una sartén a fuego medio de 3 a 5 minutos por lado. Puede cocinarlos en Broil en un horno a convección también.
