Saute scallion in butter for 2 minutes.
Add garlic, salt, pepper, crabmeat and cook for 5 minutes
Remove the crabmeat from the pan and reduce the leftover liquid almost to a tablespoon, add the crabmeat again, turn the heat off and mix well. Transfer to a bowl and cool.
Saute the onion in butter in the same pan and set aside to cool.
In a clean bowl place fresh bread crumbs, eggs, basil,cilantro, parsley, salt, pepper and hot sauce if desired. Add the cool crabmeat and the cool sauteed onion. Mix and form 1 inch balls. (Use a 1 ½ tablespoon ice cream scoop for ease.)
Arrange 2 or 3 baking sheets with parchment and spray with oil. Sprinkle with half of the dry bread crumbs, Add the cakes, sprinkle with the rest of the dry crumbs. Refrigerate for 1 or 2 hours, or overnight.
Remove from the refrigeraton 10 minutes before baking, sprinkle with Old Bay or with chilli and bake in a preheated 375F oven 10 minutes.
Remove from the pan and serve in paper cups….
