Pandebono Colombiano
Pandebono is a traditional colombian cheese bread. Making these delicious Pandebono and they came out perfect! Originally from the Valle del Cauca, these are my favorite food in the world. I learned to eat them while living in Cali, the city where all my children were born. Every afternoon I would have them for my afternoon snack. - 3/4 pound Cheese Finely grated white farmer’s
- 1/2 cup Cassava starch Yuca flour, or yucarina
- 2 tbsp Cornmeal Precooked, yellow
- 2 tbsp Sugar
- 1 tsp Salt
- 1 Egg
- Vegetable oil Or butter for the baking pan

- 1/2 taza Harina de yuca (natural o agria)
- 2 cucharadas Harina de maíz amarilla
- 2 cucharaditas Azúcar

Place the cheese, cassava starch, cornmeal, sugar, and salt in the food processor and mix 15 seconds. Add the egg and process 2 minutes more. The mixture will leave the sides of the food processor after 1 minute; continue mixing until you don’t feel or see the cheese and the mixture is soft.
Take dough by tablespoonfuls and form with your hands into little balls. (can be made in ring form too.)
Preheat the oven to 475F. Spray or lightly butter a baking sheet or mini-cupcake mold, and place the pandebonos there.
Place the baking sheets or molds on the upper rack in the oven, close the door and immediately lower the temperature to 425 F. Bake for 10 to 15 minutes, or until the bottom is golden. (If they are getting too dark on the bottom, place a second sheet underneath.)
Serve warm from the oven.

Cloque queso rallado, harina de yuca, harina de maíz, azúcar y sal en un recipiente o procesador y mezcle unos 15 segundos. Agregue el huevo y procese 2 minutos mas o mezcle amasando hasta que el queso no se sienta.
Déle forma a la masa: Tome cucharadas de masa y haga bolitas, colóquelas en latas de hornear o moldes de mini muffins. (Puede prepararlos en la forma típica de aro.)
Coloque en el horno y baje la temperatura a 425 F. Hornee durante 10 a 15 minutos, o hasta que estos hayan dorado.
Sirva enseguida para que estén calientes.
