Red Corn Flatbread, an amazing way to make a variety of flatbread, with exotic and from our land, red corn. Buy it dry and easily hydrate it by leaving in water overnight. Then cooked they are just processed and pressed. I make them in minutes and they store in the freezer perfectly. Cook them frozen or fresh. - 1 lb Corn Organic red
- 2 cups Water
Wash the corn and cover with water for 24 hours
Wash again with twice the amount of water for 24 hours
Put in a pressure cooker with 2 cups of water
Cook for one hour at high then let it cool
Grind it in a food processor
Place in 2 bowls and use an ice cream spoon to scoup out the corn and place it on a cookie sheet.
Cook on electric frappe machine on high
Take it out after 30 or 40 seconds
