Seasoning Mix for Shrimp Prawns & Chicken
1 pound shrimp
1 tablespoon green onion
1 tablespoon cilantro
1 garlic clove
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon of Seafood Spice Mix (can be Chef Pachi’s Spice mix)

Breading
1/3 cup precooked masa corn flour


1. Season shrimp and refrigerate or use.
2. Preheat fry oven.
3. Dip the shrimp in the Chef Pachi breading
4. Honor 400 for 3 minutes rotate them and 3 more minutes.

Sassy Shrimp and Mango Skewers
For 4 servings
 
16  jumbo shrimp or prawns (3 to 4 per person)
16 large basil leaves (one per shrimp)
1 tablespoon olive oil
¼ teaspoon salt
¼ teaspoon pepper
 
 
Sauce
¼ cup coconut aminos 
½ cup coconut sugar 
2 tablespoons rice vinegar
1 tsp ginger
¼ tsp sesame oil
 
1. Cook the sauce 5 ingredients in low for 8 minutes.
 
SHRIMP
1. Remove shells and clean the prawns. Add olive oil, salt and pepper. Place the basil over each shrimp.
2. Make mango rounds with a spoon or a mellon baller.
3. Skewer the s with mango. 
4. Saute a minute or two on each side. Serve.

BTW it’s quicker in a power blender, only need to chop and blend! 

According to the IFM ( Institution of Functional Medicine), “Canned coconut milk is included in this category (fats and oils) because it is predominantly a fat (not a dairy alternative) when purchased in the can.”

In my personal point of view, most commercial drinkable coconut milk, at 45 or so, calories per cup is just water with some@coconut milk.

1 chicken breast, cooked and shredded
2 slices whole grain cinnamon raisin bread
1 whole roasted chipotle, chopped to spread on one side of one slice bread
¼ avocado, to place over chipotle

1 tablespoon cilantro, minced or whole
1 cup fresh raw Mustard Greens

DIRECTIONS

Avocado to place over one slice of bread
Chipotle in the center of the avocado
Cilantro over avocado

1.	Mix the chicken with

Rosemary Chicken Kebabs 4 servings 1 pound Chicke Rosemary Chicken Kebabs
4 servings

1 pound Chicken 
3 tablespoons plain yogurt
10 sprigs of fresh rosemary 
1 teaspoon paprika
pinch of salt and pepper

1. Add all ingredients to the diced chicken.; allow to sit for 5-10 minutes. Refrigerate if not using immediately, freeze for later use.

2.Cook:
 On the GRILL: Place an oiled grill over medium-high heat. Add Chicken kebabs, separate one from the other. Cook for 2 minutes. Turn and cover. Cook for 3 minutes more and serve.

  Baking: Place tenders in an oiled or lined pan. Place them separate from each other, that is they should not touch so they bake best with a golden color. Bake in a preheated 375F oven for 10-12 minutes. 
  Panini Grill or Sandwich Maker: Place on medium-high temperature and cook covered with the heat of bot hot-plates for 2 minutes per side. Serve
 
3. Enjoy.
