Delicious Salmon and Spinach Rolls Recipe | Gourmet Appetizers by Chef Pachi

24 mini salmon rolls

INGREDIENTS:

For the rolls:

- 600 g smoked salmon (about 24 thin slices)

- 12 oz Ricotta (about 1 1/2 cups)

- 1 egg

- 10 oz cooked spinach

- 1 clove garlic, mashed

- ¼ teaspoon salt

- ¼ teaspoon pepper

- 1/2 cup chopped chives

For the Sauce:

- 2 tablespoons Extra Virgin Olive Oil

- 3 tablespoons lemon juice

- 1/4 teaspoon pepper

Cookware:

- Mini muffin-pan for 24 muffins

- Spray Oil

1. Process the cooked spinach in a food processor for 10 seconds. Add the ricotta, egg, garlic, salt, and pepper, then mix well for approximately 10 seconds.

2. Lay each slice of salmon on a Silpat or parchment paper, spaced apart from one another.

3. Spoon 1 tablespoon of the spinach-ricotta mixture onto each slice of salmon. Gently roll the salmon slices and place them seam-side down in an oiled muffin pan.

4. Bake at 400°F for 18 minutes.

5. Prepare the sauce. Serve each salmon roll with a drizzle of sauce and chives on top.

Nutty Kale & Cashew Rice: A Flavorful Delight!

INGREDIENTS:

2 cups brown or black rice

½ tablespoon olive oil

2 cloves garlic, mashed

2 teaspoon salt

¼ teaspoon pepper

1 medium onion, small diced

10 oz chopped kale (about 4 cups)

2 cups vegetable stock or water

1 tablespoon olive oil

½ cup chopped cashews

¼ cup cilantro

1 tablespoon scallions

¼ teaspoon chipotle pepper

½ cup Cotija or Parmesan cheese (optional)

1. In a 2-quart pot, add olive oil, garlic, salt, and pepper over medium heat, and sauté for 1 minute or until fragrant. Add onion, mix, and sauté for 1 minute more. Increase the heat to medium-high, add the rice, kale, water, or stock, and bring to a boil.

2. Cook until the water begins to boil. Immediately cover, turn to the lowest possible heat, and cook covered for 50 minutes.

3. In a small pan, sauté the cashews, scallion, and chipotle pepper for 1 minute. Remove from the heat, add the cilantro, mix well, and sprinkle the mixture over the rice. Serve with the cheese on the side.

In an INSTAPOT:

1. Place oil, onion, garlic, salt, pepper, and sauté at medium heat for 3 minutes. Pour rice, kale, and only 1 1/4 cups of water.

2. Cover and cook for 25 minutes; Allow the pressure cooker to release its steam naturally.

In a small pan over medium heat, place 1 tablespoon olive oil, garlic, sumac, and za’atar, and mix until fragrant. Add pine nuts, apricot, salt, and pepper and mix for 1 minute or until the pine nuts are slightly golden. Set aside and allow to reach room temperature.

2 eggs

4 oz feta cheese

1/4 cup coconut milk (from a can)

4 tablespoons (1/8 lb.) butter, melted but not hot or olive oil

1 tablespoon honey

Loaf pan. (8-1/2 x 4-1/2 x 2-1/2 inches)

Spray Oil or Silicone Pan

1. Place all dry ingredients in a bowl and mix with a fork.

2. Place all wet ingredients in a bowl; mix with a fork. Pour over the mixed dry ingredients and lightly mix with a fork.

3. Fill the silicone or oiled loaf pan. (8-1/2 x 4-1/2 x 2-1/2 inches)

Terrine of Salmon and Avocado, Culinary Elegance Delights

8 -12 servings

INGREDIENTS:

2 Cups Greek yogurt

2 cups diced Avocados, about 4 Haas or 2 Pear avocadoes

1 ¼ pounds smoked salmon, sliced

3 Tablespoons chopped dill, divided

1 Teaspoon salt

1/3 teaspoon pepper

1 Tablespoon unflavored gelatin

2 Tablespoons white wine

2 Tablespoons extra virgin olive oil

8 to 12 empty 1½-inch cans (empty tomato paste or 2-inch cans) with both sides cut out or rings.

Cooking spray to add to the cans or rings.

Parchment Paper or Silpat

1. Place yogurt, avocado, half the dill, salt and pepper in a bowl and mix gently. Keep cool.

2. Place silpat or parchment paper over a flat sheet pan. Lightly oil the insides of the cans or rings and place them on the parchment or a silpat.

3. With a 1 ½ -inch cookie cutter, cut rounds of salmon, 2 per serving, and keep covered with a damp towel or plastic wrap. Dice the rest of the salmon and add to the yogurt mixture.

4. In a small heat-resistant bowl or tiny pot, soak the gelatin with wine, gently heat on the stove until melted (do not let it boil), and add to the yogurt mixture.

5. in the bottom of each ring or can, place one round salmon. Drop a couple of tablespoonfuls of yogurt mix over the salmon, then a second slice. Refrigerate until set, about 1 hour.

6. Mix the olive oil with the remaining dill and a pinch of black pepper to serve. Remove the cans or rings by lifting them up and off the salmon, and drizzle olive oil mix over the top of each one.

- ¼ cup minced red bell pepper

- ½ tsp baking soda

- 1 ½ tsp baking powder

- 1 tsp salt

- ½ tsp curry powder

- ½ tsp red chili flakes

- ¼ tsp pepper

Wet Ingredients:

- 2 eggs

- 1 cup fresh or ricotta cheese

- ¾ cup coconut milk

- 4 tbsp melted butter

- 1 tbsp honey

Equipment Needed:

- Mini muffin pan for 24 muffins

- Spray Oil or Silicone Muffin Pan

Steps:

1. Pat dry the minced jalapeño. Place all dry ingredients in a bowl and mix with a fork.

2. Place all wet ingredients in a bowl; mix with a fork. Pour over the mixed dry ingredients and lightly mix with a fork.

3. Fill the muffin pans with batter. (Fill each cup 3/4 the height of the cup)
