Lemon Chicken That Will Make Your Family Beg for More
Description: “Indulge in the tantalizing flavors of lemon and thyme with this mouthwatering roasted chicken recipe🤩

From daughter to mother a cooking experience! 2 Whole Chickens
½ cup Butter or Greek Yogurt
2 Lemons, grated peel, and juice
3 tablespoons grainy Mustard
3 tablespoons fresh Thyme leaves
1 teaspoon Salt
½ teaspoon Pepper
 
1. Mix butter or Greek yogurt, lemon juice and grated peel of 2 lemons, mustard, thyme, salt, and pepper.
2. Spread under the skin, breasts, thighs, and legs, and over the skin. Add used limes into the cavity and set aside to bake.
3. Bake in a 350°F preheated oven for 1 hour and 30 minutes; on an air fryer at 380°F for 50 minutes. Set aside 10 minutes, cut, and serve.
 Whole chickens are generously coated with a luscious mixture of butter or Greek yogurt, zesty lemon juice, grated lemon peel, grainy mustard, fresh thyme leaves, salt, and pepper. The vibrant marinade is spread under the skin and over the chicken, ensuring every bite is bursting with citrusy goodness. As the chicken roasts in the oven or air fryer, it develops a golden, crispy skin and succulent, tender meat. After a brief resting period, the chicken is ready to be carved and savored. INGREDIENTS

2 cups rice, whole grain
2-3 chicken breasts with bone, skinned
1 grated yellow onion
1 grated red bell pepper
1 large tomato, sliced
2 tablespoons tomato puree
2 garlic cloves, minced or 2 teaspoons garlic paste*
2 bay leaves
1 tablespoon fresh oregano leaves
3 teaspoons salt
1 teaspoon pepper
½ teaspoon turmeric
14.5 oz bag frozen vegetables, carrot, green bean, corn and peas defrosted
¼ cup Pachi’s Italian Dressing*

Have a pressure cooker ??? 
I used a steam pressure cooker.

Place 2 cups water, onion, bell pepper, tomato, tomato puree, garlic, bay leaves, oregano, salt, pepper, and turmeric in the pot of the pressure cooker and mix with a spoon. 
Place the chicken breasts in the mixture, remove them, and place them in a pan on the side.
Add the rice to the pot. Mix it in the vegetables and seasoned water.
Place the chicken breasts over the rice. They will be half submerged.
Cover the pot and cook at high heat for 25 minutes.
In the meantime, mix the defrosted vegetables and the dressing and set aside.
Release all the vapor from the pot before opening the cover.
Open the cover, remove the chicken breasts, and place them in a dish on the side. Immediately add the dressed vegetables to the rice, mix, and cover again.
Take 2 forks and release all the chicken from the bones, discard the bones, and place the chicken back into the rice.
Serve or cool completely to freeze.

1 log of goat's cheese (4 0z)
1/3 cup chocolate crumbles 
	2 tablespoons dark chocolate pieces
	2 tablespoons sliced almonds (roasted)
	1 tablespoon chopped raisins
	pinch of chili powder
2 tablespoons more roasted sliced almonds (for topping over crumbled chocolate)

1. Make your chocolate crumble by mixing or processing the ingredients. 
2. Place on the countertop over flattened paper or wrap.
3. Place the cheese log on top and cover it with the crumble mixture pressing so it stays on the cheese.
4. Sprinkle the almonds when ready to serve.

8 servings

1-pound fresh Black-Eyed Peas (beans) or 1 pound dried and rehydrated Mung Beans
2 cups brown rice
1 3/4 cups of coconut milk
1 cup of water
2 1/2 teaspoons of curry or Bombay Massala
1 teaspoon of salt
1/2 teaspoon pepper

1. Place all ingredients in the pressure cooker.
2. Cook for 18 minutes over medium heat.
3. Mix and serve.

Quick and Easy Rotisserie Turkey Breast 
6-8 servings 

One turkey breast (3-5 lb.)
1 cup Greek Yogurt
1/2 cup Almond Milk (or other milk)
1 tablespoon Grainy Dijon Mustard
1 teaspoon Old Bay Poultry Spice (or try this one: https://youtu.be/M7KBiRB63jE
1 teaspoon salt
1 teaspoon pepper

1.	Mix and spread over the defrosted turkey; no need to remove the elastic net holding it together.
2.	Refrigerate for 1 or 2 days.
3.	Cook in the rotisserie or bake for 1 hour and 45 minutes at 300°F.
4.	Set aside for 5 minutes and peel off the elastic net, slice and serve.
